The chips are produced with Maqueno, a variety that can only be found in Ecuador and some parts of Colombia. It has more Calcium and Protein than other plantains. Kiwa, which means green in the indigenous language of the Andes mountain range in South America called Quechua, is an Ecuadorian company who passionately search out unique varieties of sustainably farmed vegetables in the fertile South American growing regions of Ecuador. Their vegetables are grown and harvested at altitudes of up to 11,000 feet and are even produced at that height to minimize cooking times. Kiwa buys directly from small farmers to whom it provides quality seeds, technical assistance, direct financing and ongoing support to the local farming communities.
